Created in 2017 in collaboration with La Maison du Whisky, the Plume collection by Signatory Vintage is reserved for whiskies aged in first-fill sherry casks. Absolutely magnificent, this version takes us to the heart of the Caol Ila distillery, founded in 1846 on the island of Islay. Putting peat and sherry wine on a perfect equal footing, this 2013 vintage inevitably brings to mind the Caol Ila 2012 bottled in 2020 in this same range. An uninterrupted series of particularly complex earthy, smoky, iodized, fruity, chocolatey and floral sequences, its aromatic and flavor palette constantly takes us on a journey between Islay and southern Spain.Ā
