Sullivans Cove American Oak Single Cask is our most awarded expression, and is overall the most awarded Australian whisky ever. Aged in 200L American oak ex-bourbon casks, this whisky represents the defining style of Sullivans Cove, with a strong malt backbone and flavours of vanilla, caramel, stone fruit, white flowers and powerful oak. As a single cask bottling, every tiny batch is different, expressing the unique characteristics of each barrel.

Sullivans Cove Old & Rare single cask bottlings are reserved for the very few casks we allow to age for at least sixteen years. The vast majority of our whiskies hit their peak at around 10-12 years, but every once in a while, our skilled distillers identify a cask with the specific characteristics that allow for extended maturation. The result is the oldest and rarest Australian whiskies ever released. Old & Rare American Oak is matured for a minimum of sixteen years in American oak casks previously used to age bourbon. This single cask whisky displays incredible complexity and length of palate; rich, oaky and hugely textural while still retaining the unmistakable brightness and character of Sullivans Cove’s unique spirit. Winner of "World's Best Single Cask Single Malt" at the World Whiskies Awards in 2018. Each bottle is presented in a unique, hand-made, solid wood presentation box and includes a letter of authenticity hand signed by our Head Distiller Heather Tillott. An incredible rarity and a milestone for both Sullivans Cove and the Australian Whisky Industry, these whiskies are a true piece of Australian whisky history. American Oak ‘Old & Rare’ Single Cask HH0310 was filled on the 19th of May, 2000 and decanted on the 4th of December, 2018, for a maturation of 18 years, 7 months. After such a long maturation, this 200-litre American oak ex-bourbon cask yielded only a tiny number of bottles at 48% abv. As one of the oldest Australian single malt whiskies ever released, this bottling is a true piece of whisky history and has incredible texture, complexity and length of palate.
